Have you seen those videos or blogs that share “What’s in my purse?” Well, I wanted to share “What’s in my fridge!” I love watching grocery hauls on instagram, far more than I appreciate the Nordstrom Rack sale.
I’ve had a long stretch off last week, I’m headed back into the work grind so I wanted to make meal prep and snacks easier on myself. I got a big load of groceries on Thursday and then a few more on Friday and spent the afternoon working to meal prep.

I make it a priority that the boys have fresh and healthy fruit and snack options ready. Whenever I get any fruits or veggies, I wash them and cut them and put them into containers for easy access. I didn’t used to like strawberries very much because they can be a bit tart, especially during the off season. My secret hack, (the boys and my mom both agree) is to add two packets of a natural sweetener and then refrigerate giving the strawberries a good shake every once and awhile.
I also chop up my green onions and cilantro so I can just grab the container and it’s ready to use! I feel like I don’t waste as much food when I’m intentional and prep my food this way. When the boys want a snack they can just reach in the fridge and see what is available and I don’t have to cut up fruit every time they ask.


I also used up some leftover sweet corn to make some Mexican corn. I added some lime mayo, some cilantro, tajin seasoning, and some parmesan cheese. It’s DELICIOUS and I always seem to over estimate how much sweet corn our family eats.


I have some meat and cheese cut up, I have some supplies to make pickle wraps, (my current obsession), I’ve got cottage cheese to eat with the peaches I just picked up from the Amish yesterday, I’ve got some pineapple (I LOVE PINEAPPLE!), I’ve got a container of shredded rotisserie chicken ready to throw into whatever I’m making, and I’ve got some of my FAVORITE chicken salad! Check that recipe out because it’s 10/10!


And finally, I have all the supplies to make my favorite vegetables to make my egg veggie scramble! I made this for supper last night. I fry up a sausage link fresh from our local locker, they are called snack sticks and they are my favorite. So I add two of those, a giant handful of spinach, cilantro, green onions, fresh mushrooms, chopped cherry tomatoes, and then finally two eggs. I mix all that up and add my FAVORITE lime mayo + parmesean cheese (Are you seeing a trend here? These are staples in my diet!)



I also picked up some bulk bacon cheese from the Amish. It can go bad quickly so I usually chop it into fourths, shred it and freeze it. All of this prep is in an effort to make the food that I bought easily accessible and to minimize food waste! So anyway, that’s some of what my meal prep/grocery haul looks like! It’s odd what people eat. My fridge and food isn’t anything like yours. I’m your grandmother’s age, if you have one, and your food choices are so different from mine. But I’m glad you enjoy your food, as I enjoy mine. I think it’s a great idea to cut and chop and freeze. I do that too, especially nuts. Pecans go bad too quickly so I freeze them all the time. I believe you eat much healthier than I do from your food choices. Lucky you.
I get stuck on how to prep and cook for just me! I’m used to cooking for a family, my freezer gets full fast and I’m bored with what I have to pick from!! I’ve been known to eat the same time for a week at a time…definitely boring! Plus, one meal a day is enough for me, with maybe a snack thrown in there. Love how you have good stuff for your boys to snack on and easy meal prep when you are exhausted from work!
love that you have Claussen pickles. Can’t find them anywhere in our new town here in Central Alberta. They are my husband’s favourite!
