French Bread PIZZA!

Many times when I’m stumped on what to make for supper, I go to my mom’s blog! I wanted to share a Friedman Family Favorite recipe – it goes by several names in our house: hamburger bread, french bread pizza, beef stroganoff bread, etc.

I use the Walmart Bakery Bread for only $1/loaf. I also used some feta/garlic dip that was about to go bad in addition to cream cheese. I add a TON of mushrooms. I also added tomatoes and cilantro. It was SO GOOD and I got a little creative with the toppings. This is one of Craig’s favorite meals and it’s so easy to quickly throw together. Leftovers are awesome too!

Cherry Cheesecake FUNNIES!

I’ve been making this super simple cherry cheesecake recipe for over a decade now and my number one fan of my cheesecake was my dad.

Every birthday, Christmas, celebration, etc, I would make Dad a cherry cheesecake. Since he passed away in 2019, I haven’t made a cheesecake. Kind of because it makes me a little sad but also kind of because I didn’t think Craig liked cheesecake. To my surprise, I was filling out our grocery list for the week and Craig requested some of my classic cherry cheesecake.

Happily, I added the ingredients to my WalMart pickup order and made Craig a cheesecake for his birthday on the 20th. Carver asked for a slice and it occurred to me that he had never had my cheesecake before! I explained how Papa Moo loved cheesecake and I would make one for him weekly when I lived at home.

I scooped him up a slice, he took a bite, his eyes got WIDE and he got so excited he squealed:

“MOM! I’ll bet Papa Moo is SO SAD he’s dead because this cheesecake is SO GOOD!”

OH MY GOSH. My abs hurt from laughing so hard. That kid cracks me up, I hope it made you laugh too 🙂

A “shitty” recipe and a GREAT one!

I LOVE cooking and creating new recipes. I seriously do. I love playing with flavors and rushing a sample across town for mom and Karl to try, it’s such a fun hobby I have!

Craig and I really enjoy BBQ and especially when they have Mac and Cheese on their menu – we can’t refuse. We were recently at a local BBQ joint and fell in love with their gouda mac and cheese. I went home and got to work trying to recreate the recipe.

I took pictures all along the way to blog about it, I was so excited, it tasted so good! The bacon and bread crumbs were such a tasty topping. It sincerely tasted so good and so gooey.

Let’s just say I was in the bathroom 30 minutes after I ate it. TOO. MUCH. GREASE!

Between the bacon and the butter, this was far too rich and far too greasy. Unless you need a good clean out, I will not be sharing that recipe any time soon. I would recommend just heading to taco bell instead and save yourself the hassle.

I just wanted to share that not all recipes turn out picture perfect. Not all recipes make it to publishing.

BUT THIS ONE….

I actually posted this recipe on my Facebook page while I was still eating it because it was THAT GOOD! There’s a local coffee shop that has something called a “Slammin’ Salmon” on their menu and it’s salmon, cucumbers, and a creamy dill sauce spread on a waffle. It’s AMAZING and one of my favorite treats! So I got to work recreating it.

Anywho, that’s all I have. I’m finishing off a really busy work week and ready for a weekend at home with the family! Let me know if you try any new recipes I share!

The PERFECT Fall Burrito!

I’m working on incorporating more veggies in my diet. One of my favorite recipe creators is Liz Moody on instagram. Her reels are so fun and she has the most creative way to use veggies! I also love following her for smoothie recipes and her body positivity! I found Liz on instagram but I often refer back to her ADORABLE website for more recipes.

This burrito I’m sharing about today has a few *strange* ingredients but the flavors come together so well to create as Liz’s husband describes “a pumpkin spice breakfast burrito” and my mom and I couldn’t agree more!

This recipe caught my eye as I was scrolling through instagram reels. I was excited to add the rosemary, thyme, and sage, something about Fall just needs those three spices in as many recipes as possible.

This recipe contains:

4 cups butternut squash

4 cups brussel sprouts

1 yellow onion

Fresh herbs

Olive oil

Sausage

Burritos

To make the cranberry salsa, you’ll need:

2 cups frozen cranberries

Maple syrup

Lime juice

Garlic

Jalapeño

I was so intrigued as to how all of these flavors and ingredients would come together. I made a big batch and have about a dozen of these babies in my freezer and ready to grab a plant based meal on the go! Mom gave this recipe a big thumbs up. I LOVED the cranberry sauce (I did have to add a touch more sugar than the recipe states) but it perfectly rounds out the recipe!

These are my favorite burritos – not only are they low carb but there are NO sugar and they crisp so nicely. I get these at our local fareway. I wish they were a little bigger or a little stronger but they work great and are very moist.

SOFT PRETZEL SUCCESS!

I’ve been on a huge baking and cooking kick lately (as you can tell by all the recipe posts) and I found an awesome soft pretzel recipe I wanted to share with you all!

Every Wednesday there is a farmer’s market in Decorah and if I’m in town I always stop and get a soft pretzel! They are so delicious and amazing and YUM!

So, I set out on a quest to create my own soft pretzels and while it was a success, they aren’t even comparable to the ones I get at the farmer’s market – they are totally different but awesome in their own way. The ones at the farmer’s market are like bread where as these really have the consistency of a soft pretzel.

One reason I love sharing recipes is because I can link to the original site without having to re-type and re-claim the recipe as my own AND the creator of the recipe that did put in all of that work (it’s a lot of work to create a recipe on a blog) gets credit from your visit so HERE IS THE LINK to the recipe I used!

So this recipe made about 6 pretzels (obviously of carying sizes) and I only really screwed up one because I didn’t boil it long enough in the water/baking soda. I would recommend boiling at LEAST 2 minutes or until it increases (almost doubles) in size. I’ll use less baking soda in the water next time too.

I dropped one off at Karl’s house (he wasn’t home so I left it on his counter) and then delivered one to Mom – the look on her face was priceless when she realized they were actually delicious! HA!

I will for sure be making these again! Hopefully my shaping skills improve too!
