Hotdog Meatballs!

I wish I had a fancier picture, or even a picture of the meatballs AFTER they got done cooking, but considering the chaos that has been the last three weeks of our life, I’m impressed I even got this picture!

It is now a staple recipe in our house as well. This recipe is SUPER easy to double or triple for big crowds, these meatballs freeze really well and microwave for a quick supper, and they go GREAT with mashed potatoes and green bean casserole. I make these meatball monthly and they taste wonderful!

Here’s the recipe right off of Mom’s blog!

1 lb hamburger
1/2 lb GROUND cheap hotdogs
1 c crackers
1 beaten egg
1/4 t pepper
Mix together with your hands.
Make a glaze with 3/4 c brown sugar
1 T vinegar
1/2 c water
1/2 t ground mustard

Mix together and add 1/3 of the glaze to the meat mixture and save the rest.
Mix the meat and glaze.  Form into meatballs.  Pour the remaining glaze over the meatballs.  Bake in the oven for 20 minutes at 350.

    Thanks for the meatball recipe, they sound easy and delicious. I like the idea of making a big batch and freezing some for a quick easy meal later.
