I’ve been making this super simple cherry cheesecake recipe for over a decade now and my number one fan of my cheesecake was my dad.
Every birthday, Christmas, celebration, etc, I would make Dad a cherry cheesecake. Since he passed away in 2019, I haven’t made a cheesecake. Kind of because it makes me a little sad but also kind of because I didn’t think Craig liked cheesecake. To my surprise, I was filling out our grocery list for the week and Craig requested some of my classic cherry cheesecake.

Happily, I added the ingredients to my WalMart pickup order and made Craig a cheesecake for his birthday on the 20th. Carver asked for a slice and it occurred to me that he had never had my cheesecake before! I explained how Papa Moo loved cheesecake and I would make one for him weekly when I lived at home.
I scooped him up a slice, he took a bite, his eyes got WIDE and he got so excited he squealed:
“MOM! I’ll bet Papa Moo is SO SAD he’s dead because this cheesecake is SO GOOD!”
OH MY GOSH. My abs hurt from laughing so hard. That kid cracks me up, I hope it made you laugh too 🙂

I am so happy for ALL of you that you keep your Dad alive in your hearts and conversations. Your children will always know him and that makes my heart sing. My Dad has been gone 27 years already and I do the same.
