I TRICKED THEM! Incorporating Veggies on a Busy Schedule

Without any further ado, here’s how to make it:

Ingredients

  • 8 ounces uncooked medium shell shaped pasta (about 3 cups)
  • 1 can (10 1/2 ounces) Campbell’s® Creamy Cauliflower Cooking Soup
  • 1 1/2 cups shredded 2% milk Cheddar cheese (about 6 ounces)
  • 1/4 cup reduced fat (2%) milk
  • 1/4 teaspoon ground black pepper
  • 2 cups chopped thawed frozen broccoli florets

How to Make It

Step 1

Cook and drain the pasta according to the package directions.  While the pasta is cooking, heat the oven to 400°F.

Step 2

Stir the soup, cheese, milk and black pepper in a 2-quart casserole.  Add the pasta and broccoli and stir to coat.

Step 3

Bake for 20 minutes or until the mixture is hot.  Serve hot.

Okay, now here’s a few hacks:

I doubled the recipe to fit in a 9×12 pan.

I added leftover HAM and that now seems like an absolute necessity.

I used frozen broccoli because I can never keep fresh produce fresh.

I baked it at 285 degrees for 1.5 hours and oh man that was perfect.

I didn’t cook the noodles all the way so they wouldn’t get too soggy.

I used my food processor to combine the cream of cauliflower and the cheese and milk to make it creamier.

I’m halfway through a ROUGH week. I made this recipe on Sunday and threw it in the oven tonight. It was a great recipe for meal prep!

Plus, who doesn’t already have these ingredients in their house?

So creamy 🙂

Life update: halfway through a busy work week. I vow to never leave blog posts until the night before AGAIN! I love writing, I love keeping up with the blog, it doesn’t seem like a chore but man is it nice to have a full week of blog posts scheduled in advance!

I made myself do dishes and laundry and get groceries so I’m still keeping my head above water as far as chores go around the house. Carver is actually super helpful with chores! Here he is doing his own laundry:

One Pot Pizza Pasta Perfection!

I’m working on getting better at meal planning and being intentional about the groceries I buy. Often times I get home from the grocery store and I have a bunch of elements to make several meals but not enough for one complete meal. It saves time and money to PLAN AHEAD and MAKE A LIST of only the ingredients we need.

Anyway, I found this awesome recipe. Craig does NOT like baked pasta. He won’t eat any kind of spaghetti bake that I make and was super hesitant to try this but it was a hit! Such a hit in fact, I forgot to take a picture of it when it was completed! (whoops!) I stole this picture from the original site:

Ingredients:

  • 1/2 lb Italian sausage, mild
  • 30 Pepperoni, slices
  • 1/2 tsp Garlic powder
  • 1 14 ounce jar Pizza sauce
  • 8 oz Penne rigate
  • 1/2 tsp Italian seasoning
  • 1 Pinch Parsley and red pepper flakes
  • 1/4 tsp Pepper
  • 1/2 tsp Salt
  • 1 1/2 cups Mozzarella cheese
  • 2 cups Water

Directions:

  1. Preheat oven to 350.
  2. Heat a large oven safe skillet over medium heat.
  3. Add sausage and cook breaking up pieces until sausage is cooked thoroughly, about 8 minutes.
  4. Stir in halved pepperoni slices until heated through, about 2 minutes.
  5. Add in pizza sauce, water, penne, garlic powder, Italian seasoning, salt and pepper and stir together until combined.
  6. Bring mixture to a boil.
  7. Stir then cover.
  8. Reduce to a simmer and cook for about 15 minutes until pasta is tender.
  9. Turn off heat and stir in 1/2 cup cheese until blended.
  10. Sprinkle remaining cheese on top and then top with remaining whole slices of pepperoni.
  11. Transfer skillet to oven and bake for about 5 minutes until cheese is melted.
  12. Carefully remove skillet from oven.
  13. Sprinkle with some parsley and/or red pepper flakes before serving.

SNACKS!

Here are some of my favorite SNACKS to bring to work or to have around the house! They aren’t terrible for you either! Healthy – ish = BONUS!


Snack Factory PRETZEL CRISPS!

Garlic Parmesan pretzel crisps with ham salad or egg salad are the bomb! I feel like this might be a better alternative than eating it on bread. I also like to use these with hamburger dips and hummus!

The pretzels are only 100 calories per serving, 0g trans fat, 0g saturated fat, 0mg cholesterol . Also – GLUTEN FREE! They taste good and are very filling!

They have plenty of flavors – my favorite is garlic Parmesan but I can see that they might be too salty. I also love the “everything” cracker pretzel. (linked below). I’ve also tried the blue (original) flavor as well! It looks like they have cinnamon and sugar, chocolate, honey mustard, and buffalo flavor too!

Bottom line, I. LOVE. THESE. PRETZEL. CRACKERS!


Nut Thins, Turkey Pepperoni, and Mozzarella Cheese Sticks!

Okay – this snack has been my favorite for a LONG time. Even when I was taking Anatomy and Physiology in my junior year of high school this was my go to snack.

The nut thins are super healthy!

  • 3 grams of protein per serving
  • No cholesterol and no saturated fat
  • Gluten-free, Certified Kosher

They are made of rice and almonds! The cheddar cheese and smokehouse flavors are my favorite. They also have pepperjack, ranch, honey cinnamon, sea salt, etc. EVERYONE including Craig and Carver love nut thins and I don’t feel guilty letting them eat “junk food.”

The pepperonis don’t need to be refrigerated but I think they taste better that way. I sometimes mix it up with Colby jack or pepper jack cheese sticks as well. I love to cut up the cheese into chucks and throw them in with the turkey pepperoni.


Way Better Chips

These chips are DELICIOUS! More than that, they are HEALTHY!

  • Certified gluten-free, vegan, kosher and Non GMO
  • Sprouted ingredients provide incredible nutrient absorption
  • Processed in a nut free environment
  • NO trans fats

A friend of mine brought these to work and I was HOOKED! I would attach an amazon link but they only sell the chips in bulk. I’ve only tried the sweet chili flavor which pairs great with a Friedman family favorite: GUACAMOLE!


There you have it folks! These snacks make me look like I eat super healthy but honestly, they just taste good!

RAMEN NOODLES ARE NOT JUST FOR BROKE COLLEGE STUDENTS!

This recipe is amazing.

I don’t care who you are, what you do, or how much money you make, you are NOT TOO GOOD for a good bowl of Ramen noodles.

This recipe is PERFECT for a quick meal. It takes like two seconds to make and is DELICIOUS. I make this after work instead of stopping and ordering out on the way home.

In typical Kalissa fashion, this isn’t a super well written recipe. I am my mother’s daughter, I rarely use recipes and I just throw whatever together.


Here’s what you need:

Beef ramen noodle package

Bacon ends and pieces (or like two slices of bacon works) chopped

2 eggs

1/4 cup (ish) of parmesean cheese


Here’s how you do it:

In a pan, chop the bacon up and fry it (add some onion if you want)

Split two eggs in the pan of cooked bacon and make it more like scrambled eggs until the eggs are about 3/4s of the way cooked

In another pan boil the noodles – Do not cook them ALL the way but like 3/4s of the way

Add the kind of cooked drained noodles into the eggs and bacon

Dump the Parmesan cheese into the mix

Add the broth packet into the mix

Mix it all up!

Top with Parmesan cheese and ENJOY!

Eggs and bacon ready for noodles!

A dead car battery, chicken lo mein, a bike, and a SUPER cute tote.

So my initial thought was to share a quick and EASY recipe with you all for a quick supper before work:

Chicken Lo Mein

  • Boil some noodles (I used angel hair, my mom uses ramen)
  • Cook some chicken or try these pre-cooked grilled chicken breasts that I love from Walmart
  • Cut up some cabbage
  • Cut up and onion
  • Shred some carrot
  • Add a cup of chicken broth
  • Let the chicken, cabbage, onion, carrot and broth simmer (in a separate pan)
  • Drain the noodles when they are done boiling and add them to the chicken/cabbage mixture
  • Fry a couple eggs (nothing fancy just cook them and scramble them) and add them to the mix
  • Add some soy sauce to your liking

Ta-dah! It is delicious, quick and easy.

Okay so these are delicious and juicy and I highly recommend! Thanks WalMart!

So ANYWAY. I made this right before I had to leave for work. I usually eat my supper on the go in my car. I threw some in an open container and grabbed my bag and was on my way.

My car has had a few issues starting lately and I thought it had resolved. Nope. Not tonight. It wouldn’t even turn over. Car was DEAD.

Craig was in the combine. Mom was in Decorah. The only other person I’d call for help was watching the boys in the house and didn’t have a car with them! Mom said I could take dad’s suburban (read more on that here: https://www.joscountryjunction.com/at-the-hospital/ and here: https://www.joscountryjunction.com/the-burb/ )

While the suburban has four wheels and could get me where I needed to be, it is still every bit of a farm truck. Dad’s boots and overalls are still in the back. Coffee stains all over the center console. It smells like dirt and dust and a farm.

The problem was the suburban was all the way across town at my mom’s house! It was getting cool and dark and I was already late for work. I grabbed my bike from the garage which had already been put up for the winter – threw my supper in my bag – and across town I went on a bike, in scrubs, with a giant heavy bag, and off I went!

I definitely didn’t go as fast as I wanted to, my bag kept rubbing on my bike tires, I was pooped by the time I got to my mom’s house!

Anyway, I was only 8 minutes late to work. The lo mein was DELICIOUS.

Don’t EVER accuse me of not being resourceful!

P.S. I LOVE this tote! Seriously! A friend at work had one. It has SO MANY pockets! She talked me into ordering one and I’m telling you it is the PERFECT nurse bag! It can hold both of my contigo water bottles, my purse, my Ipad, my lunch, it zips, it has short handles and long handles, internal AND external pockets! I bought the black and white version. This would make an excellent gift for a teacher, nurse, or I guess anyone who carries a lot of stuff! 🙂

The easiest and most delicious egg bake ever

HERE IS THE RECIPE:

One bag of hashbrowns
One pound of whatever breakfast meat (I use sausage)
A bunch of Shredded Cheese
A dozen eggs
Pepper/Salt/whatever
More cheese in slice form (I use smoky bacon cheddar slices)

Add hashbrowns
Add meat
Add a few handfuls of shredded cheese
Whisk and dump a dozen eggs on top
Cover it with slices of cheese
Cook it for about that long at whatever temperature until the eggs are cooked in the middle
(Usually about 45 minutes)

EAT!

I love smearing it with salsa con caso!
It makes GREAT leftovers.
It is PERFECT for a brunch.
It is SO easy to make ahead of time.
It is gluten free.
It is cheap.
It is hard to screw up.

Instead of birthday parties we do BRUNCHES – 2 pans will feed about 14 people and it is so so cheap! Everyone loves it and you can meal prep the day before!
